Cut the lemongrass and pandan leaves into thin slices and grate the ginger.
Heat the water in a saucepan until it’s boiling hot and add lemongrass, pandan leaves, ginger, and mint leaves.
Simmer on a low heat for 8 to 10 minutes.
Remove from heat and add sugar or honey. Enjoy!
For ICED VERSION: Let the tea cool down to room temperature. Then add plenty of ice into each glass and pour the tea into the glasses through a strainer. Squeeze some lime juice and serve with mint sprigs and lime wedges.
